Day 1

9.15 a.m.: Welcome meet at the Ecole des Vins de Bourgogne in Beaune

All necessary documents provided

  • The basics of sensory analysis (part 1)

 

12.45 p.m.: Tasting and lunch at a restaurant

Return to the Ecole des Vins

  • The basics of sensory analysis (part 2)

 

5.30 p.m.: End of Day 1. Free evening

 

Day 2

9.30 a.m.: Welcome meet at the Ecole des Vins

  • Tasting methodology: Visual, olfactory and taste analysis
  • Tasting of red Bourgogne wines
  • Basic awareness of the vinification and ageing of red Bourgogne wines

 

12.30 p.m.: Tasting and lunch at a restaurant

Interpreting the landscape of the Corton hill’s Grand Cru vineyards: concept of terroirs and viticulture

Return to the Ecole des Vins

  • Tasting of white Bourgogne wines
  • Basic awareness of the vinification and ageing of white Bourgogne wines

 

5.30 p.m.: End of Day 2. Free evening

 

Day 3

8.45 a.m.: Meet at the Ecole des Vins

  • Visit of a cooperage and discovery of how barrels are made
  • Visit to a wine estate with wine tasting from barrel

 

12.30 p.m.: Tasting and lunch at a restaurant

Return to the Ecole des Vins

Tasting workshop on wine service:

  • Choosing the right glasses
  • Wine serving temperature
  • Decanting white and red wines
  • Tasting sparkling wines from Bourgogne

Presentation of a registered  Diplôme d’Honneur from the Ecole des Vins de Bourgogne

 

6 p.m.: End of the workshop

The “Certificat du dégustateur” is entirely focussed on tasting Bourgogne wines.

 

Three days packed with a multitude of practical activities to immerse you in the exciting world of Bourgogne wines.

 

With your glass in hand, you will be introduced to the basics of sensory analysis, and the methodology and techniques of tasting—learning to see, smell, taste; to identify and discuss the main sensory characteristics of white and red wines from Bourgogne, not to mention the sparkling Crémants.

 

This training is carried out in Beaune and is open to is open to all , professionals and employees of Bourgogne’s wine sector and informed amateurs with a basic wine knowledge who wish to pursue their discovery of Bourgogne wines further through tasting.

 

Preparation for the certified training that is the Certificat Professionnelle d’Analyse Sensorielle des Vins de Bourgogne (CPAS).
