Chardonnay is the emblem of Burgundy great white appellations. It is the best known of the three. Next comes Aligoté, often associated with a moment of sharing as an aperitif. But there’s also an island in Yonne, close to the town of Auxerre, where Sauvignon Blanc and Sauvignon Gris “resisted” and gave birth to the A.O.C. Saint-Bris. We invite you to try to identify blindly each of them… Chardonnay? Aligoté? Or Sauvignon? Do you think you’ll recognize them?
